Iconic Exeter pub saved after lockdown announces new head chef
Exeter’s iconic Hourglass pub has announced David Smith as its new head chef. The much-loved pub in Melbourne Street was saved from closure by The Exeter Brewery after it did not reopen following the pandemic.
David began his career in Devon. After working in some of the region’s best hotels he moved onto various restaurants across New Zealand and Australia. He now returns to the South West after spending seven years cooking in London.
The Hourglass pub, which was originally established in 1848, was listed as an Asset of Community Value in 2020 by Exeter City Council. Its reopening by Exeter Brewery in late 2021 was celebrated by the city.
Alan Collyer of Exeter Brewery, said: “The Hourglass is renowned across the city for its brilliant food, and we are delighted to welcome David on board to continue that legacy. The menu is about inventive and accessible dishes using the very best locally sourced ingredients. The laid-back vibe, extensive drink selection and really great food are what the Hourglass is famous for, and with David on board customers can look forward to some really fantastic food whilst enjoying the unique Hourglass experience”
David said: “I have very fond memories of the Hourglass, being a customer myself when living in Exeter. It’s a real honour to take the helm at such a loved pub, known for its top-class food offering. People travel to the pub for its amazing food and we’re here to make sure they return time and time again. The menu will be supplier led and ingredient focussed. We are fortunate to have incredible producers on our doorstep and our food reflects their exceptional work.”
