Quicke’s launches highly limited edition ewe’s milk cheese
A highly limited edition batch of ewe’s milk cheese has been released by Quicke’s. This small but mighty batch has been matured and graded for the past 12 months, creating a stunning new addition to their range of clothbound cheeses.
Handcrafted and naturally matured at their family farm in Devon, Quicke’s Ewe’s Milk Clothbound Cheese is intensely buttery. It is made from the milk of sheep that graze on pastures in Woodbury, a small Devonshire village. The smooth richness of the milk imparts a terrific depth of flavour and, as with all Quicke’s cheeses, it is made with heritage starters using traditional methods that date back generations.
Mary Quicke MBE says: “Like many of the most revered delicacies such as asparagus, elderflowers and strawberries, sheep’s cheese is only available seasonally and in small quantities so you have to celebrate and respect the milk when it comes in. Sheep’s milk is packed full of fat and protein, which are the building blocks we look for when making great cheeses.
“It never ceases to amaze me how cheese can transform throughout maturation and this cheese has been no exception. That’s the thrill of working with such an alive product - over the course of a year, this cheese has developed an exceptionally rich flavour profile with fruity, olive oil notes throughout and a long milk middle that gives way to a nutty, slightly peppery finish.
“It is excellent paired with a crisp Chenin Blanc, and makes marvellous savoury muffins and pesto.”
