Halloween Smoothie
Serves 4-6
RECIPE PREP TIME: Approx 40 mins to cook and cool the pumpkin
RECIPE COOK TIME: Ready in seconds!
Inspired by the sweetness of roasted root veg – I don’t know a single child who doesn’t love this…
INGREDIENTS:
250g cooked pumpkin / butternut squash – no skin, no seeds (see below!)
2 large, ripe bananas
350ml pressed apple juice
METHOD:
Whizz everything up in a blender / smoothie maker and serve!
COOKS’ NOTES
Don’t peel the pumpkin / squash! Save time and effort by baking it in a hot oven, exactly as you would a jacket potato (skin on). After 40 minutes or so, check it’s done by inserting a sharp knife into the fattest part. If it goes in easily, it’s cooked! Leave to cool before slicing in half, lengthways and removing the flesh.
